Preheat oven to 425 and line a baking sheet with foil.
Slice the potatoes.
Brush foiled baking sheet with olive oil.
Lay on a single layer of sweet potato rounds.
Sprinkle with salt & pepper.
Bake 20 minutes then flip and bake an additional 10 minutes.
In a small bowl mash the avocado then stir in lime juice and paprika.
Place a dollop of avocado mix on each sweet potato round.
Sprinkle on bacon and cilantro.
Serve and enjoy!

This Recipe Can be Doubled: This is a great recipe for a crowd. Simply increase the ingredients proportionately and split it into two baking sheets before baking.
Air Fryer: You can also make this sweet potato appetizer using an air fryer. Roast sweet potato rounds at 425 degrees for 8-10 minutes.
Keep Avocado Fresh: If you are making this recipe ahead of time, to prevent the avocado mash from, browning store the avocado pit in the container with it.
