Start by cutting of each end of the zucchini and cut into even sticks.
Next, mix the panko, parmesan and spices into a shallow bowl.
In separate bowl, beat the egg.
First dip the zucchini in the egg and then panko breading mix. Repeat once more for extra crispy results or just coat once.
Spray air fryer basket with oil and place sticks in the basket. Spray the zucchini and cook on 370 for 11 minutes or until golden.

Soggy Fries: To avoid soggy fries, sprinkle a bit of salt to draw excess moisture out and use a paper towel to pat down the excess moisture off the zucchini stick before coating in egg and panko breadcrumbs.
