Heat the oven to 375 degrees and prepare a baking sheet by covering it with parchment paper.
Combine together the cream cheese, sugar, and vanilla in a small bowl.
Place the crescent sheet onto your baking sheet and divide it into 8 even squares. Join the seams together.
Place a spoonful of cream cheese mixture in the middle of every crescent square.
Tuck in the edges of the crescent-shaped squares and gently press them together at the center.
Place 2 cherries and a small amount of cherry gel onto the center of each cheesecake filling.
Bake until the crescents turn golden, which should take around 10-12 minutes.
Take out of the oven and let it cool down a bit before serving.
Notes
Drizzle Icing on Top: For an extra touch of sweetness and visual appeal, drizzle a simple icing over your cherry bites. Use a spoon or a piping bag to drizzle the icing over the cooled bites in a decorative pattern.
Add Nuts: Add a flavorful crunch by sprinkling chopped nuts on top of the cream cheese filling before baking. Pecans, almonds, or walnuts work wonderfully and will provide a toasty, golden brown layer.
Whipped Cream: Serve these cherry dessert bites with a dollop of freshly whipped cream on top. It's a delightful addition that elevates the overall dessert experience.
