Instructions
Rinse quinoa well under cool water.
Add prepared quinoa and water to a small saucepan and bring to a boil. Reduce to simmering, cover, and cook for 15 minutes.
Remove from heat; fluff quinoa with a fork and set aside while you make the rest of the salad.
In a medium bowl, stir together prepared quinoa, cucumber, feta cheese, parsley, mint, red onion, pistachios, and chickpeas.
In a small bowl, whisk together the olive oil, lemon juice, and All Purpose Seasoning until combined.
Pour dressing over salad and gently toss until completely combined.
Serve immediately or store in an airtight container in the refrigerator for up to three days.
Notes
Protein:
Add grilled chicken breast, shrimp, or tofu cubes for a heartier salad. You can also add nuts.
