Place apples, lemon juice and brown sugar into a microwave safe bowl.
Microwave on high for four minutes.
In the meantime, add cider and milk to a large saucepan on medium-high heat.
Stir in oats and salt.
Cook oats over medium-high heat, stirring periodically, for about 5-6 minutes, or until oats soften.
Remove from heat, stir in Pumpkin Pie Spice blend and warm apple mixture.
Serve immediately.
Christina's Notes
Nuts: Almonds, pecans, or walnuts add a great crunch.
Sweeten: Drizzle maple syrup or honey drizzled on top to make the oatmeal sweeter.
Variation tip: Raisins or dried cranberries make a wonderful oatmeal. You can also use apple pie spice instead of pumpkin spice for even more delicious apple flavor.
Alternate ingredient: Chia seeds or hemp seeds add Omega-3 to the apple pie oatmeal.
Apple Cinnamon Baked Oatmeal: Try using an instant pot or crock pot to cook the oatmeal. You can also make baked oatmeal bars in the oven as well.
Protein Oatmeal: Add a vanilla protein powder to increase the amount of protein.
