4.67 from 6 votes
These Bisquick Waffles are easy and delicious, and are flavored with vanilla and fresh blackberries. With this recipe, you won't have to sacrifice convenience for a great breakfast on a busy day.
1pintBlackberries, choosing either whole or mashed
Instructions
In a medium sized bowl, combine the flour, sugar, baking powder, and salt. Make a well in the center and set aside.
In another bowl, combine the eggs, almond milk, coconut oil, and vanilla, and mashed blackberries, if using. Add egg mixture all at once to flour mixture and stir just until moistened but the batter will still be lumpy.
Pour batter on preheated and greased waffle maker. Add 4-6 blackberries per waffle if using whole. Cook according to waffle maker's directions.
Christina's Notes
Temperature: Ensure all your wet ingredients are at room temperature. This promotes even mixing and a fluffier waffle.
Don't Overmix: Overmixing leads to tough waffles. Mix until just combined, a few lumps are okay!
Buttermilk: Substitute buttermilk for milk. The acidity in buttermilk tenderizes the gluten and adds a subtle tang.
Seltzer Surprise: Swap some of the milk for club soda or seltzer water for a lighter and crispier waffle.
