Breakfast is still one of my all time favorite meals but I am constantly trying to find ways to spice it up. No matter how much you love a meal, having the same thing every time can get really boring. We usually go for pancakes but I’ve realized waffles are the real underdog in our house. They are a huge hit when we do make them so I’ve been trying to find new ways to make them.
With berry season already in full swing for us I am loving adding berries into everything. We were heading out of town and had several pints of blackberries left to use so I decided to throw them into our favorite vanilla waffles and they turned out awesome. I love the mix of the vanilla mixed in with the surprise blackberry every so often.
If you want a more consistent blackberry flavor you can mash up the berries and add them in like I did with my double blackberry pancakes. And of course these are fantastic paired with eggs and potatoes. We are super partial to my IHOP style scrambled eggs with a secret ingredient!

Vanilla Waffles with Blackberries
Ingredients
- 2 cups all purpose flour
- 2 Tbsp sugar
- 1 Tbsp baking powder
- ¼ tsp salt
- 2 eggs, slightly beaten
- 1 ¾ cups almond milk
- ½ cup coconut oil, melted
- 1 Tbsp vanilla
- 1 pint blackberries, choosing either whole or mashed
Instructions
- In a medium sized bowl, combine the flour, sugar, baking powder, and salt. Make a well in the center and set aside.
- In another bowl, combine the eggs, almond milk, coconut oil, and vanilla, and mashed blackberries, if using. Add egg mixture all at once to flour mixture and stir just until moistened but the batter will still be lumpy.
- Pour batter on preheated and greased waffle maker. Add 4-6 blackberries per waffle if using whole. Cook according to waffle maker's directions.
I love the recipe, but I am reluctant to make it with almond milk because of nut allergies. Can I make it with ordinary milk. I am going to use regular milk and see what happens. FYI I’m not the one allergic to nuts but I have family who is and I’ll avoid ALL nuts ALL the time.
