5 from 1 vote
Our chicken provencal recipe is a delicious and hearty dinner option. This classic French dish is bursting with flavor and is sure to satisfy even the hungeriest of appetites.
Season the chicken thighs evenly with the salt and black pepper.
Heat the olive oil in a large oven-safe skillet over medium-low heat. Add the chicken thighs and cook undisturbed for 7 to 8 minutes. Flip the chicken thighs and continue cooking for another 7 to 8 minutes.
Sprinkle the chicken with the Herbes de Provence and dried thyme. Add the sliced onion, garlic cloves, green olives, and cherry tomatoes to the skillet. Pour the white wine around the chicken.
Transfer the skillet to the preheated oven. Braise uncovered for 1 hour.
Remove the skillet from the oven and allow the chicken to cool briefly before serving.
Christina's Notes
Use bone-in thighs: Bone-in chicken thighs add flavor to the dish and help keep the meat moist and tender as it cooks.
Marinate for more flavor: You can marinate the chicken in the Herbes de Provence for at least 30 minutes before cooking to give the seasoning more time to flavor the meat.
Serve with a side: This chicken can be served on its own or with bread, rice, or roasted vegetables.
