In a small skillet over medium heat toast the coconut, stirring often, until golden brown then set aside to cool.
Melt the chocolate chips and stir until smooth.
Pat pineapple slices with a paper towel to dry then dip one side at an angle into the chocolate.
Gently tap off excess chocolate and place coated pineapple on a wax paper lined tray.
Sprinkle with toasted coconut right away before chocolate sets.
Place tray in refrigerator until chocolate sets.
Serve immediately and enjoy!

Chocolate Dipped Fruit: Try other chocolate covered fruit in chocolate such as mango, oranges or bananas, as the toasted coconut would pair great.
White Chocolate Chips: For the non-chocolate lovers in your life, you can make white chocolate coated pineapple for a more delicate flavor.
Drizzle: You can drizzle white chocolate over the dark chocolate or milk chocolate for a nice finishing touch.
Extra Smooth Chocolate: Add a tablespoon of coconut oil in with the chocolate chips before melting in the microwave. Melting chocolate chips and coconut oil makes the chocolate melt evenly and easier to work with.
Double-Boiler: If you don't have a microwave you can melt chocolate using the double boiler method by putting a glass bowl on top of a boil pot of water.
Dipping Tip: Dipping snacks in chocolate can take a bit of patience to ensure they end up picture perfect.
