  • Pineapple: For this chocolate pineapple, you can use fresh or canned.
  • Chocolate Chips: Semi-sweet or dark chocolate chips will work best, but you could also use milk chocolate. Any of these types of chocolate will work including the wafers.
  • Coconut: You will want to use unsweetened coconut flakes to make the toasted coconut.

How to Make Chocolate Covered Pineapple

These are the basic steps for making Chocolate Dipped Pineapple. Please refer to the recipe card below for more detailed instructions.

STEP 1: CUT UP PINEAPPLE

If you are using fresh, you will need to put your pineapple up into even slices. Make sure to pat your pineapple slices with a paper towel to absorb the excess moisture, whether you are using fresh or canned.

STEP 2: TOAST COCONUT

In a small skillet over medium heat, toast coconut flakes until golden brown. Stir continuously while they are heating to prevent burning.

STEP 3: MELT CHOCOLATE CHIPS

In a microwave safe bowl, melt the chocolate chips. Microwave for 30 second intervals stirring in between until chocolate is fully melted. To make the chocolate smoother and easier to work with add in a tablespoon of coconut oil.

STEP 4: DIP PINEAPPLE SLICES IN CHOCOLATE

Once chocolate is completely melted, dip pineapples in chocolate then transfer to a parchment paper lined tray or cookie sheet. Sprinkle each slice with toasted coconut. Refrigerate until chocolate sets, then serve and enjoy!

  • 8-10 pineapple slices, fresh or can
  • 1 cup semi sweet or dark chocolate chips, melted
  • ½ cup coconut

Instructions

  • In a small skillet over medium heat toast the coconut, stirring often, until golden brown then set aside to cool.
  • Melt the chocolate chips and stir until smooth.
