This Coconut Mojito is the perfect refreshing cocktail for your next summer getaway. Made with rum and notes of coconut, this tropical mojito is like a vacation in a glass.

Equipment

Ingredients
 

  • Lime Wedge
  • 6 leaves Mint
  • 1 ounce Coconut Vodka
  • ½ ounce Coconut Rum
  • 1 ounce Pineapple Juice
  • ¼ ounce Cream of Coconut
  • Splash of Club Soda
  • Sprig of Mint, for garnish
  • Lime Wedge, for garnish

Instructions
 

  • Muddle mint leaves and lime wedge in cocktail shaker.
  • Add ice, vodka, rum, pineapple juice and cream of coconut in a cocktail shaker.
  • Shake vigorously.
  • Pour into iced glass and top with splash of soda.
  • Garnish with a mint sprig and lime wedge.

Christina's Notes

  • Soda: Use different flavors of soda, such as pineapple.
  • Frozen: You can enjoy this coconut mojito recipe frozen as well. Freeze for about 30 minutes for a slushy texture.
  • Flavored Ice: Freeze fruit juice into ice cubes for flavored ice.
