Ingredients
 

  • 24 ounces Corn kernels
  • ½ cup Red onion, diced
  • 2 Jalapenos, deseeded and diced
  • ¼ cup Cilantro, chopped
  • 1 Tablespoon Lemon juice
  • 1 Tablespoon Lime juice
  • ¼ teaspoon Salt

Instructions
 

  • Place the corn in a large bowl and add the red onion, jalapenos and cilantro.
  • Season to taste with the lemon and lime juices and salt.
  • Taste and adjust to your personal preferences.
  • Refrigerate until ready to serve.

  • Let it sit: A short rest (15–30 minutes) helps flavors meld beautifully.
  • Serve chilled or room temp: Both work, but chilled salsa feels extra refreshing.
  • Salt generously: Corn needs salt to pop—don’t be shy.
  • Layer heat: Jalapeño, serrano, or chipotle add kick. Remove seeds for milder heat or roast for smoky flavor
