A bowl of corn, fresh cilantro, salt, lemon, lime, jalapeños, and chopped red onion on a white surface—everything you need for a classic Chipotle Corn Salsa Recipe.
  • Corn: I prefer to use fresh corn on the cob in this easy recipe for the best flavor and texture. You can use white sweet corn or use roasted yellow ears of corn.
  • Red Onion: Chipotle uses fresh red onion with the corn.
  • Citrus Juice: You will need both lemon and lime juice. I like to squeeze it fresh for the best flavor to this salsa.

Take this copycat chipotle corn salsa recipe one step further and prepare the ingredients before including them in this Chipotle Mexican Grill copycat recipe. If you cook the corn, you up the flavor.

  • Roasted Corn: To add a deeper, smoky flavor, you can roast the corn on a baking sheet at 400°F (200°C) for 10-15 minutes, or until they start to brown. Let them cool before adding to the salsa.
  • Grill the Corn: Cook corn on the cob until slightly charred, cut the corn from the cob and use in the recipe. This method also adds a great smoky flavor.

How to Store Corn Salsa and Use Leftovers

  • Store: Store your favorite salsa in an airtight container in the refrigerator for up to 3-5 days.
  • Use Leftovers: Leftover salsa is incredibly versatile. Use it as a topping for grilled chipotle chicken or fish, mix it into rice or a quinoa bowl.

  • Serve chilled or room temp: Both work, but chilled salsa feels extra refreshing.
