To make the sandwich part, pipe frosting over entire backside surface of the cookies.
Put the face cookie on top of the piped frosting.

Christina's Notes
Edible Antlers:
Feel free to use pretzels for the antlers, then the cookie will be completely edible.
Different Cookies:
Maybe your family doesn't love gingersnaps, use whatever kind of cookie you like.
Different Frosting:
You could try a frosting with cinnamon, brown sugar, vanilla, chocolate... whatever you like!
Sugar Cookie:
Use a sugar cookie dipped in chocolate for the base. Then stick the candies directly to the chocolate before it sets.
Smaller Version:
Try using an oreo cookie for the base of your reindeer cookie and stick the antlers into the filling.
Make Your Own:
Have a great recipe for gingersnaps and cream cheese frosting? Go ahead and make your cookies and frosting!
