Jennifer Aniston Salad is a filling salad made famous by the Friends star. Aside from being a viral sensation, this salad is packed with healthy ingredients for a light lunch that Ross and Rachel would approve of.
Add prepared quinoa and water to a small saucepan and bring to a boil. Reduce to simmering, and cook for 15 minutes. Place lid on top and allow to sit off the heat for 5 minutes.
Remove from heat; fluff quinoa with a fork and set aside while you make the rest of the salad.
In a medium bowl, stir together chickpeas, cucumber, red onion, feta cheese, parsley, mint and pistachios.
Gently fold in the prepared quinoa.
In a small bowl, whisk together the olive oil, lemon juice, and All Purpose Seasoning until combined.
Pour dressing over salad and gently toss until completely combined.
Serve immediately or store in an airtight container in the refrigerator for up to three days.

Protein: Add grilled chicken breast, shrimp, or tofu cubes for a heartier salad. You can also add nuts.
