In a small skillet over medium heat toast the coconut, stirring often, until golden brown then set aside to cool.
Melt the chocolate chips and stir until smooth.
Pat pineapple slices with a paper towel to dry then dip one side at an angle into the chocolate.
Gently tap off excess chocolate and place coated pineapple on a wax paper lined tray.
Sprinkle with toasted coconut right away before chocolate sets.
Place tray in refrigerator until chocolate sets.
Serve immediately and enjoy!
Notes
Other Chocolate Dipped Fruit: Use other fruit such as mango or bananas, as the toasted coconut would pair great those those types of fruit as well.
White Chocolate Chips: For the non-chocolate lovers in your life, you can make white chocolate dipped pineapple for a more delicate flavor. Or can you drizzle white chocolate over the dark chocolate for a nice finishing touch.
Extra Smooth Chocolate: For extra smooth chocolate, add a tablespoon of coconut oil in with the chocolate chips before melting in the microwave to make the chocolate melt evenly and easier to work with.
Double-Boiler: If you don't have a microwave you can melt the chocolate using the double boiler method by putting a glass bowl on top of a boil pot of water.
Top with Nuts: You can also top these pineapple slice with chopped macadamia nuts or almonds in place of the toasted coconut.
