Ritz Cracker Meatloaf
No ratings yet
My family loves this Ritz Cracker Meatloaf. Just thinking about it brings a smile to my face. If you're looking to rediscover the magic of meatloaf from your grandmother's table. Get ready for some seriously good, old-fashioned comfort food, with a little buttery, crispy secret.
Place the crushed Ritz crackers in a small bowl. Pour the milk over the crackers and let them sit for 2 to 3 minutes to soften.
Add the onion, garlic, and parsley to a food processor. Pulse until finely chopped.
In a large mixing bowl, combine the ground beef, softened cracker mixture, onion mixture, Parmesan cheese, eggs, and All Purpose Seasoning Blend.
Mix gently with your hands until just combined. Avoid overmixing, which can make the meatloaf dense.
Line a rimmed baking sheet with foil or parchment paper.
Shape the meat mixture into a loaf and place it in the center of the prepared baking sheet.
In a small bowl, whisk together the ketchup, brown sugar, and dry mustard until smooth.
Reserve about one-third of the glaze for serving. Spread the remaining glaze evenly over the top of the meatloaf.
Bake for 45 to 60 minutes, or until the meatloaf reaches an internal temperature of 160 degrees F.
Remove the meatloaf from the oven and loosely tent with foil. Let it rest for 10 minutes before slicing.
Slice and serve with the reserved glaze on the side.
Christina's Notes
The softened Ritz crackers help keep the meatloaf moist and tender while adding a buttery flavor.
An 80/20 ground beef blend provides the best balance of flavor and moisture.
Do not overmix the meat mixture. Mix only until the ingredients are combined to keep the meatloaf tender.
For easier cleanup, line the baking sheet with foil before shaping the meatloaf.
Allow the meatloaf to rest before slicing so the juices stay in the meat instead of running onto the plate.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheat slices in the microwave or cover and warm in a 325 degree F oven until heated through.
This meatloaf can be assembled up to 24 hours ahead and refrigerated before baking.
Freeze the baked and cooled meatloaf for up to 3 months. Thaw overnight in the refrigerator before reheating.
