Spicy Peanut Noodles
These Spicy Peanut Noodles are a Thai-inspired classic that you can enjoy as an easy weeknight meal, featuring sweet chili sauce, sriracha, and crunchy peanuts.

- 2 packages Chicken Flavored Ramen Noodles
- 2 tablespoons Peanut Butter
- 1 tablespoon Sweet Chili Sauce
- 2 tablespoons Low Sodium Soy Sauce
- ½ teaspoon Fish Sauce
- ½ teaspoon Sriracha
- 2 Green Onions, chopped
- ¼ cup Peanuts, chopped
Instructions
- Prepare ramen according to package directions.
- Meanwhile, in a bowl, whisk together the peanut butter, sweet chili sauce, soy sauce and fish sauce.
- When the ramen are finished cooking, reserve 1 cup of the broth and drain the remaining broth from the noodles.
- Pour reserved broth and sliced green onions into the bowl with the peanut butter mixture and whisk until creamy.
- Add noodles and toss to combine.
- Top with chopped peanuts.

- Peanut Butter: For a healthier option, use low-sodium or salt-free peanut butter.
- Crunchy Peanut Butter: Use crunchy peanut butter for extra texture. If the peanut sauce is too thick, add water to thin.
- Additional Chili Flavor: To make it spicy, or if you didn't have chili oil, add in chili flakes or some curry paste.
- Add Garlic: Stir in some minced garlic with the stir-fry noodles. Add the minced garlic along with your stir-fried toppings.
- Add Oil: The sauce may tend to stick, so you can add a bit of oil. Make the peanut sauce with sesame oil, peanut oil, chili oil, or rice vinegar.
