Strawberry Horchata

Strawberry Horchata is the perfect summertime drink that will take your sipping experience to new heights. This recipe is a twist on the classic Mexican rice drink that combines the lusciousness of ripe strawberries with the creamy goodness of cinnamon-spiced horchata.
Combine the rinsed rice, cinnamon sticks, and 2 cups of hot water in a bowl with a lid. Cover and let soak for at least 2 hours or overnight.
Transfer the soaked rice, cinnamon sticks, and soaking liquid to a blender. Add 2 additional cups of water and blend on medium speed until the rice and cinnamon are finely ground.
Pour the mixture through a fine-mesh strainer into a large pitcher or bowl, discarding the solids.
Remove the stems from the strawberries and reserve about 10 strawberries for serving.
Add the remaining strawberries, sweetened condensed milk, whole milk, and vanilla extract to the blender. Blend until smooth.
Strain the strawberry mixture into the rice mixture.
Stir until well combined, then add the remaining 1 cup of water.
Slice the reserved strawberries.
Fill a serving pitcher with ice and the sliced strawberries, then pour the prepared strawberry horchata over the top and serve.

Swap the whole milk for your favorite plant-based milk, such as almond milk or coconut milk, to make a vegan version.
Substitute brown rice for white rice if you prefer.
Chill the horchata in the refrigerator for about 1 hour before serving to allow the flavors to meld.
Store leftover horchata in a covered pitcher or airtight container in the refrigerator for up to 3 days. Stir well before serving, as separation is natural.
Serve over ice for the best flavor and texture.
Do not freeze, as the dairy ingredients may separate once thawed.
