It is wonderful for summer
because it is is light, refreshing and so tempting on a hot summer day. Beautiful to look at and healthy too.

baked, cooled and cut into cubes

fresh strawberries

fresh blueberries

instant vanilla pudding,

prepared according to package directions

lemon

zested

whipped topping, thawed and divided
Instructions
Prepare instant vanilla pudding according to package directions.
Add the zest of a lemon to the pudding and stir to combine.
Fold half of the whipped topping into the pudding.
In a large trifle bowl, arrange a single layer of cubed pound cake.
Spread half of the pudding mixture on top the pound cake.
Spread a layer of strawberries on top the pudding.
Top with another layer of pound cake and then another layer of pudding.
Place a layer of blueberries on top of the pudding.
Top with reserved whipped topping and garnish with berries.
Keep refrigerated until ready to serve.

Add Crunch:
Top with a layer of nuts or crushed cookies for a wonderful crunch to this simple trifle recipe.
Short cut tip:
Cheat and buy premade delicious pound cake from your grocery store.
Variation tip:
Feel free to use a chocolate cake. it is really wonderful too.
Alternate ingredient:
Fresh mint on top to decorate this mixed berry trifle.
