Add the carrots and peppers to one mixing bowl, and the shrimp and pineapple to another.
In a small bowl, whisk together the garlic, brown sugar and teriyaki sauce.
Pour half of the sauce mixture in the bowl with the vegetables, and the other half into the bowl with the shrimp. Toss each to combine well.
Spread the carrots and peppers onto a parchment lined baking sheet, and bake for 10 minutes.
Remove the tray from the oven, and layer the shrimp and pineapple on it.
Bake for another 10 minutes.
Serve garnished with chopped green onion.
Notes
Double: Shrimp for 8 is easy. Just double the recipe. Toss the shrimp in onto the prepared baking sheet pan, put it in the oven and enjoy.
Add Different Vegetables: Try asparagus or broccoli to the shrimp. This easy and delicious variation is easy to prepare.
Garnish: Fresh cilantro or fresh parsley are great toppers. Finish with a lemon wedge. Lemon juice adds a nice acid layer to the dish.
Garlic Butter Shrimp Recipe: Feel free to make a different sauce. Try making a sheet pan garlic butter shrimp. Cook shrimp in a garlic butter sauce in place of the teriyaki. It is delicious and easy.
