Instructions
Add all of the salad ingredients to a large bowl and toss to combine.
Add all of the salad dressing ingredients to a jar with a tight fitting lid. Shake vigorously until fully combined.
Drizzle salad dressing over salad.
Notes
Legumes:
You can try adding different legumes to this salad. For instance, try lentils instead of chickpeas.
Lettuce:
While you can use any lettuce in this recipe, you can try radicchio, a bitter red lettuce popular in many Italian dishes.
