Preheat the oven to 350℉. Grease a casserole dish.
Dice the potatoes into ½ inch-1 inch pieces.
In a medium skillet, add the ground beef and seasonings, and cook over medium low heat, breaking the meat apart as it cooks, until no longer pink. Drain any grease.
In a large bowl, mix the cooked meat, diced potatoes, mixed veggies, and soups. Pour into the casserole dish.
Sprinkle cheese over the top, cover with aluminum foil and bake for 40 minutes.
Remove the foil, then bake for an additional 15-20 minutes, until potatoes are tender.

Thinly Slice the Potatoes: Use a mandolin or sharp knife to slice potatoes evenly and thin—about ⅛ inch thick. This ensures they cook through and absorb flavor without staying firm or turning mushy.
Brown the Ground Beef First: Sauté the beef with onions, garlic, and a splash of Worcestershire sauce before layering. This adds depth and prevents greasy separation during baking.
Layer Thoughtfully: Alternate potatoes, beef, and sauce (like cream of mushroom or cheddar soup) in even layers. Finish with cheese on top for a golden, bubbly crust.
Let It Rest Before Serving: Resting for 10 minutes after baking helps the layers set and makes serving cleaner.
