This one-pan wonder layers ground beef, potatoes, veggies, and cheese into a cozy, oven-baked dish that’s as satisfying as it is simple. Whether you’re feeding a hungry crew or just craving something nostalgic, this casserole delivers comfort with minimal prep and maximum payoff.

If your casserole with ground beef and potatoes is watery, it’s probably due to using frozen vegetables. It’s important to let them come to room temperature before adding them into the mix, or else they’ll add too much moisture.

Pro Tip: Make It Ahead or Freeze It

Assemble up to 24 hours in advance and refrigerate. You can also freeze it unbaked, just thaw overnight and bake as usual

  • Beef: You will need 1 pound of lean hamburger meat to make this easy hobo casserole.
  • Mixed Vegetables: I prefer to use a bag of green beans, carrots, corn and peas.
  • Potatoes: Feel free to use potatoes such as Russet or Yukon gold.

  • Potatoes: Tater tots or frozen diced hash browns. Tater tots should be layered on top (cook for the last 20-30 minutes). Hash browns can be mixed right in.

  1. Preheat Oven and Prep: Preheat your oven and grease a casserole dish. Chop the potatoes into 1 inch pieces.
  2. Cook the Beef: In a large skillet over medium low heat, add the ground beef, onion powder, garlic powder, salt and pepper. Cook until the beef is no longer pink, and crumble as you go. Drain the grease.
  3. Make Casserole Mixture: In a large bowl, mix together the cooked meat, diced potatoes, mixed veggies, cream of mushroom soup and cream of chicken soup.
  4. Bake the Casserole: Pour the mixture into the casserole dish and top with shredded cheddar cheese. Cover with aluminum foil and bake for 40 minutes. Then, remove aluminum foil and bake again until potatoes are tender.

Preparing ingredients ahead of time can help to save me time and kitchen space when it comes to making the recipe for dinner.

  • Complete Mix (No Potatoes): Cook the ground beef, drain it, and mix it with the soups and thawed vegetables. Store this mixture in the refrigerator for up to 2 days. Add the diced potatoes and cheese just before baking.
  • Full Assembly (Best for Next Day): Assemble the entire casserole (including the potatoes and cheese), cover tightly, and refrigerate for up to 24 hours. Increase the covered baking time by 10-15 minutes to account for starting with a cold dish. Dinner is ready in no time.
  • Dice Potatoes: Dice the potatoes and keep them covered in water in the fridge for up to 24 hours to prevent browning. Drain well before using.

Alternate Cooking Methods

You can also make this classic recipe in the crock pot or pressure cooker. Just place the simple ingredients in the cooker and you are ready to go.

  • Slow Cooker: The texture will be softer and more stew-like.
  • Instant Pot: Cook ground beef in the liner using the Sauté function. Drain. Add remaining ingredients and 1/2 cup of water or broth. Cook on High Pressure for 5 minutes, then use a Quick Release (QR). Sprinkle with cheese and broil for 2-3 minutes to melt. The perfect family dinner.

  • Store: Cool completely, then cover the dish tightly or transfer leftovers to an airtight container. Refrigerate for 3-4 days or freeze for 2-3 months.
  • Reheat: Oven: Reheat in a 300°F oven, covered, until warm (about 20 minutes).
    • Microwave: Reheat individual portions on medium power in 1-2 minute intervals.
  • Use Leftovers: Scoop the casserole into hollowed-out bell peppers or large tomatoes and bake until tender.
    • Casserole Grilled Cheese: Use small amounts of the mixture as a filling for a grilled cheese sandwich.

Ingredients
  

  • 1 pound Lean ground beef
  • 1 ½ teaspoons Garlic powder
  • 1 teaspoon Black pepper
  • ½ teaspoon Salt
  • 3 medium Russet potatoes, peeled and cut into ½-inch cubes
  • 2 cups Mixed vegetables, frozen and thawed
  • 10.5 ounces Cream of chicken soup, 1 (10.5 ounce) can
  • 10.5 ounces Cream of mushroom soup, 1 (10.5 ounce) can
  • 2 cups Cheddar cheese, shredded, divided

Instructions
 

  • Preheat the oven to 350 degrees F. Lightly grease a 9×13-inch casserole dish.
  • In a large skillet over medium heat, cook the ground beef with the garlic powder, black pepper, and salt, breaking it apart as it cooks. Continue cooking until the beef is browned and no pink remains. Drain any excess grease.
  • In a large mixing bowl, combine the cooked ground beef, potatoes, mixed vegetables, cream of chicken soup, cream of mushroom soup, and 1½ cups of the shredded cheddar cheese.
  • Stir until all of the ingredients are evenly combined.
  • Transfer the mixture to the prepared casserole dish and spread into an even layer.
  • Sprinkle the remaining ½ cup cheddar cheese over the top.
  • Cover tightly with aluminum foil and bake for 40 minutes.
  • Remove the foil and continue baking for 15 to 20 minutes, or until the potatoes are tender and the casserole is bubbling around the edges.
  • Let the casserole rest for 10 minutes before serving.

    I made this for dinner but I used chicken and added mushrooms and onions. It is very tasty and maybe next time I will make it in the crock pot. Thanks for posting amazing recipes.
