Spray a 13x9 baking dish with nonstick cooking spray.
Arrange the apple slices in the bottom of the baking dish in a single layer.
Heat the olive oil in a large skillet over medium high heat.
Add the onion and saute until tender and translucent, about 3-4 minutes.
Season both sides of the pork chops with All Purpose Seasoning.
Add the pork chops to the skillet; cook until just browned on each side, about 2 minutes per side. The pork will not be cooked through.
Transfer the pork chops to a plate and set aside.
Add the butter, brown sugar and cinnamon to the skillet and cook until melted.
Pour the butter mixture over the apples and arrange the browned pork chops on top.
Bake for 30 minutes or until the internal temperature of the pork chops reaches 145 degrees F
Christina's Notes
Bring Pork to Room Temp: Let the chops sit out for about 15 minutes so they cook evenly and stay juicy. • Give the Pan Space: Sear in batches if needed. Crowding the pan prevents browning and leads to steaming. • Pick Firm Apples: Choose varieties that hold their shape; softer apples break down too quickly. • Rest Before Serving: A few minutes of rest keeps the juices inside the pork instead of spilling onto the plate. • Mind the Apple Timing: Add apples at the right moment so they stay tender without turning mushy. • Build a Simple Pan Sauce: Deglaze with apple cider, apple juice, broth, or wine. Add herbs like thyme or sage and simmer until slightly thickened, stirring occasionally for a glossy finish
