Spicy Roasted Chicken Legs

  • ½ cup Butter
  • 2 Lemons, juiced
  • 3 teaspoons All Purpose Seasoning, or salt and pepper, divided
  • 1 teaspoons Cayenne pepper
  • 1 teaspoon Sriracha, or your favorite hot sauce
  • 4 cloves Garlic, minced
  • 24 Whole chicken legs, rinsed and patted dry

Instructions
 

  • Preheat the oven to 450 degrees F. Line baking sheets with non-stick foil.
  • Season the chicken with 1 1/2 tsp of All purpose seasoning and set aside.
  • In a large sauce pan, melt the butter.
  • Add the lemon juice, All Purpose seasoning, cayenne, Sriracha and garlic, and stir. Set aside.
  • Using tongs, dip chicken pieces in butter mixture, ensuring each piece is completely coated.
  • Place chicken on foil-lined baking sheets.
  • Using remaining butter mixture, baste all chicken pieces one final time before placing in oven.
  • Bake for 30 to 35 minutes, basting several times.
  • Chicken should be golden brown and reach an internal temperature of 165 degrees F.
  • If you prefer crispier chicken, place baking sheet under the broiler for a few minutes. Keep a close eye on them so they don’t burn.

Christina's Notes

  • Crispy Roasted Chicken: Place the chicken legs on a baking sheet under the broiler for a few minutes to get a crispy skin.
  • Add Honey to the Recipe for Baked Chicken: Coat the chicken legs with a drizzle of honey over the chicken will balance the spicy with a bit of sweet.
  • Air Fryer Chicken Drumsticks: You can make the chicken in the air fryer if you wish. This is perfect when you are only making a few.
  • Cooking Chicken Legs: You can make the seasoned crispy baked chicken leg recipe on the grill too.
  • Store: Place the chicken in an airtight container or storage bag for up to five days in the refrigerator.
  • Toss: you can place the marinade and drumstick in a large plastic bag and toss to coat the chicken. Then pop them in the oven. The recipe is so easy.
