Strawberry Stuffed French Toast

This Strawberry Stuffed French Toast Recipe is the perfect 20 minute, fruity and creamy breakfast. It's fancy enough for Christmas morning but easy enough for an everyday treat.
Whisk together the batter in a bowl and set aside.
Cut the crusts off the bread. Flatten the bread with a rolling pin.
Lightly spread mascarpone cheese on one piece of bread. Layer sliced strawberries on the bread and roll up the piece of bread. Pinch together the ends.
Dip in french toast batter.
Continue with all of the roll ups. Melt butter in a hot skillet or griddle and cook until golden brown on all sides.

Use Stale Bread: Slightly stale bread soaks up the custard better without becoming mushy. Leave your fresh bread out uncovered for a few hours or overnight to dry out slightly.
Don't Oversoak the Bread: Dip the bread in the egg mixture just long enough to coat both sides. Oversoaking will result in soggy French toast.
Cook Over Medium Heat: Cook the French toast over medium heat to ensure it cooks through evenly and doesn't burn on the outside.
Use Enough Butter: Don't skimp on the butter in the pan! It helps create a golden-brown and slightly crispy exterior.
Seal the Edges Well: After adding the filling, press the edges of the bread together firmly to seal it and prevent the filling from leaking out during cooking. You can even use a fork to crimp the edges.
Toppings: Toppings include warm maple syrup, berries, powdered sugar, more cream cheese filling or whipped cream.
