How Do I Prevent Soggy French Toast?

A plate of roll-ups filled with fruit and cream, dusted with powdered sugar, and recipe delight.

Prevent soggy toast by quickly dipping into the batter so that it doesn’t absorb much of it.

Pro Tip to Make this Recipe

Dust the cooked French toast with powdered sugar while it’s still warm so it adheres nicely.

Several slices of white bread, strawberries, three eggs, butter, cream cheese, sugar, and cinnamon are arranged in small bowls on a white surface—perfect ingredients for a delicious Stuffed French Toast Recipe.
  • Bread: Any bread you have will work to make classic French toast, but using a French bread or thick sliced Texas toast can be great options.
    • Challah: Offers a rich and slightly sweet flavor.
    • Brioche Bread: Similar to challah, with a buttery and tender crumb.
    • Sourdough: Sourdough bread provides a slightly tangy flavor that complements the sweetness of the filling.
    • Cinnamon Raisin Bread: Adds a natural sweetness and spice.
  • Strawberries: Fresh, ripe strawberries are easiest to slice and bring the most sweet flavor. If using frozen fruit, let thaw in the fridge overnight.
    • Mixed Berry: Use a combination of strawberries, blueberries, raspberries, and blackberries.
    • Peach or Nectarine: Slice ripe peaches or nectarines thinly and use them instead of strawberries. You might want to sauté them lightly with a touch of butter and sugar for extra flavor.
    • Banana Nutella: Skip the strawberries and make sliced bananas and Nutella stuffed French toast.
    • Apple Cinnamon: Use thinly sliced apples sautéed with butter, cinnamon, and a touch of brown sugar.
  • Mascarpone Cheese: Mascarpone is like a cream cheese. Substitute mascarpone cheese for whipped cream cheese for a richer, slightly tangier filling.
    • Ricotta Cheese: Mix ricotta cheese with powdered sugar, lemon zest, and a touch of vanilla for a lighter filling.
    • Nut Butters: Spread a thin layer of your favorite nut butter (peanut, almond, cashew) on the bread before adding the strawberries.

Prep Ahead Suggestions for this Breakfast Recipe

I like to prepare ingredients for the best French toast ahead of time so that I don’t have to do all of the steps at once when I’m making breakfast.

  • Strawberry Filling: You can prepare the strawberry filling (sliced strawberries tossed with sugar and a touch of lemon juice) up to a day in advance. Store it covered in the refrigerator. This allows the juices to release and the flavors to meld.
  • Cream Cheese Filling: A sweet cream cheese filling (cream cheese, powdered sugar, vanilla extract) can also be made a day ahead and stored in an airtight container in the refrigerator.
  • Bread Selection: Choose your bread the day before to ensure you have the perfect loaf. Slightly stale bread actually works best for French toast as it soaks up the custard without becoming soggy.

How to Store, Reheat and Use Leftovers

  • Storing: Leftover stuffed French toast should be eaten as soon as possible, but it can be stored in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat your French toast sandwich in the microwave in 30 second intervals. You can also heat in the air fryer or oven at 350 for about 10 minutes.
  • Using Leftovers: Enjoy leftover baked French toast with a Breakfast Crunchwrap or a Greek Yogurt Parfait with Fruit and Granola.

Expert Tips for Making Stuffed French Toast with Strawberries

  • Use Stale Bread: Slightly stale bread soaks up the custard better without becoming mushy. Leave your fresh bread out uncovered for a few hours or overnight to dry out slightly.
  • Don’t Oversoak the Bread: Dip the bread in the egg mixture just long enough to coat both sides. Oversoaking will result in soggy French toast.
  • Cook Over Medium Heat: Cook the French toast over medium heat to ensure it cooks through evenly and doesn’t burn on the outside.
  • Use Enough Butter: Don’t skimp on the butter in the pan! It helps create a golden-brown and slightly crispy exterior.
  • Seal the Edges Well: After adding the filling, press the edges of the bread together firmly to seal it and prevent the filling from leaking out during cooking. You can even use a fork to crimp the edges.
  • Toppings: Toppings include warm maple syrup, berries, powdered sugar, more cream cheese filling or whipped cream.
  • Sweet Cream Cheese Filling: Make the cream cheese filling to use instead of cheese. Sweetened cream cheese filling is made with cream cheese, powdered sugar and vanilla.
  • Serve With: Serve with Steak and Egg Breakfast Skillet, Chocolate Cake Waffles or Crispy Air Fryer Breakfast Potatoes.
