Zucchini Banana Bread
Zucchini Banana Bread is a fun way to make healthy eating taste great. This sweet and savory bread recipe is full of delicious flavor and uses super simple ingredients.
Ingredients
- 3 cups All Purpose Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 3 teaspoons Cinnamon
- 3 Eggs
- 1 cup Vegetable Oil
- 2 ¼ cups Sugar
- 3 teaspoons Vanilla Extract
- 2 cups Zucchini, grated
- 1 cup Walnuts, chopped
- 2 Bananas, mashed
Instructions
- Grease and flour two 8×4 inch loaf pans.
- Preheat oven to 325 degrees.
- Sift flour, salt, baking powder, soda and cinnamon together into a bowl.
- In a separate bowl, beat eggs, oil, vanilla and sugar together.
- Add sifted dry ingredients to the creamed mixture and beat well.
- Stir in zucchini, bananas, and nuts until well combined.
- Pour batter into prepared pans.
- Bake for 50-60 minutes, or until toothpick inserted in the center comes out clean.
- Cool in pans on rack for 20 minutes.
- Remove bread from pans and completely cool.

- Add Raisins: Raisins or dried cranberries are a wonderful addition to this zucchini bread recipe.
