BBQ Chicken Sliders
4.95 from 19 votes
These easy BBQ chicken sliders are exactly what your weeknight dinner or game day spread has been missing. Juicy shredded chicken, crispy bacon, melty cheese, and creamy coleslaw all packed into a soft, golden Kings Hawaiian Roll.
In a large bowl, combine the shredded, cooked chicken and BBQ sauce; Stir to combine.
Spray a 13x9 baking dish with non-stick cooking spray. Slice the rolls in half, lengthwise and place the bottom half in the baking dish.
Spread the chicken mixture evenly over the bottom half of the rolls.
Top the chicken with bacon crumbles and even cover with cheese.
Top with the roll tops.
In a small bowl, combine the melted butter, BBQ seasoning and parmesan cheese. Evenly brush the mixture over the tops of the rolls.
Bake for 15 minutes or until the rolls are golden brown.
Remove the sliders from the oven, lift off the top and evenly spread the prepared coleslaw on top. Slice into individual sliders before serving.
Christina's Notes
Start with good shredded chicken. Rotisserie chicken is the easiest and most flavorful option. You need 3 full cups, so one standard rotisserie chicken shredded is usually perfect.
Use a saucy coating, not a swimming pool. Combine your chicken with 1 cup of BBQ sauce and stir until everything is evenly coated. Too much sauce makes the rolls soggy and the filling slides out when you bite in.
Slice the whole roll slab at once. Keep the rolls connected as a sheet and cut the entire package in half lengthwise. This saves time and makes layering fast and even.
Layer in order. Chicken mixture first, then bacon crumbles, then cheese. This order keeps the cheese close to the chicken so it melts properly during baking.
Brush the tops generously. The butter, BBQ seasoning, and Parmesan mixture on top is what makes these sliders look and taste bakery-level. Don't rush this step — use a pastry brush and cover the whole surface.
