Chicken and Stuffing Casserole is the perfect easy meal for busy weeknights. It can be prepared ahead of time to have this ultimate comfort food baked in just 30 minutes.
6ouncesChicken Stove Top Stuffing, 1 box, plus ingredients to make stuffing
Instructions
Preheat oven to 400℉. Spray a 9 x 13 baking dish with non-stick cooking spray and set aside.
Cut chicken into one inch pieces (bite sized) and place in a bowl.
Add the cream of chicken soup, sour cream, minced garlic, All Purpose Seasoning and mixed vegetables to the bowl with the chicken. Stir until fully combined.
Spread the chicken mixture into the prepared baking dish.
Prepare stuffing according to packaged directions and evenly spread it on top of the chicken mixture in the baking dish.
Bake in preheated oven for 40 minutes or until the chicken reaches an internal temperature of 165℉.

Season: Taste and adjust the seasoning as needed. Salt, pepper, and herbs like thyme or sage can enhance the flavor.
Let it Rest: Allow the casserole to rest for a few minutes after baking to allow the stuffing to absorb the liquid and the flavors to meld.
Cornbread: Try a cornbread stuffing for the top of the casserole.
Check for Doneness: Cook until the chicken reaches an internal temperature of 165℉.
Chicken: Use chicken thighs in place of chicken breasts. You can also use shredded chicken for smaller pieces distributed throughout, or pre cooked chicken.
Flavorful Stuffing: Add some low sodium chicken broth into the stove top chicken stuffing. Replace some of the required water with broth to get more flavor.
