Slow Cookin Summer: Easy Recipes for a Slow Cooker on It's a KeeperLet’s keep the Slow Cookin’ Summer Series going with this recipe from Shari from Faith Filled Food for Moms. Here’s her recipe:

I’ve been working hard at creating healthy, easy to make snacks for myself and my family.   I’m very limited on time and I’m sure you are too!  So dive in and try this new Homemade Crockpot Hummus.  It will save you time and money, plus you can season it to your liking!

Homemade Crockpot Hummus

Part of It’s a Keeper’s Slow Cookin’ Summer Series

Ingredients:

  • 1 16 oz. Package dried Chickpeas/Garbanzo Beans
  • 4 Cloves Garlic
  • 1/4 Cup Olive Oil
  • 1/4 cup Lemon Juice (fresh squeezed or from bottle)
  • 1 tsp. Onion Powder
  • 2 tsp. Garlic Salt
  • 5 Cups water (might have to add 1 more cup later)

Directions: Pour the package of dried Chickpeas into the crockpot and add all ingredients.

Hummus

Turn your Crockpot on low for 8-9 hours or high for 6. Check for doneness.  If Beans are squishy and soft you can then drain out the water and put into a blender 2 cups at a time.  I have found that you need to add 1/2 – 3/4 cup more water to blender.  You can decide what consistency you like.

At this time you can do your own taste tests.  Decide if you want to add more Garlic, Onion Powder or Garlic Salt.  You can also try other flavors…the skies the limits..try a little Curry 1/2 tsp. per 2 cups.   Yum!

Enjoy!

I love hummus, but have never tried to make it myself. You make it look so easy, I may just have to give this recipe a try!

I’ve never actually tried hummus myself but I did give some to the kids when I was weaning them and they seemed to like it. Maybe I should try and make them some. It does make a great picnic food and we’re having family over on Sunday so it might be the perfect occasion to test it out!

I just love hummus. I don’t eat it a lot and I don’t know if the kids eat it, but I love to take it to parties. It is always a hit.

I make my hummus using canned chickpeas but I love how you can use the crockpot with dried beans!
