Texas Sheet Cake is one of my all time favorite desserts. My mother-in-law made the BEST! Despite the name, Texas sheetcakes, or sheath cakes, may not have originated in Texas. While sheath cakes have been around since the 30s, they may be a simplified version of German chocolate cake. Nevertheless, today, they’re still enjoyed across the American south.

Step 1: Make the Cookies Using Cake Mix
First, preheat the oven to 350°f. In a large bowl, whisk together the cake mix, oil, and eggs until the ingredients are combined to make the cookie dough. Then line a baking sheet with parchment paper. Next use a cookie scoop to drop the dough onto the baking sheet 2 inches apart, and bake for 7-8 minutes. Allow for cookies to cool down on the cookie sheet before transferring to a cooling rack.
Step 2: Heat and Stir the Frosting
Next make the chocolate frosting, melt butter on the stove top in a small saucepan over medium heat. Then add the unsweetened cocoa powder, vanilla extract, and whole milk heat and whisk. Remove from the heat. Once taken off the heat, add the powdered sugar and mix until completely smooth.

Then when the icing is still warm, spoon onto the cookies and allow icing to set. Once the cookies are cooled, remove the cookies from the baking sheet and pack them up.
