How to Make Easy Frosted Sugar Cookies

These are the basic steps for making lofthouse sugar cookies. Please refer to the recipe card below for more detailed instructions.

Mixing the soft ingredients.

STEP 1: PREP

First, preheat oven to 350 line a baking sheet with parchment paper or silicone mat. Second, in a large bowl of a stand mixer with a paddle attachment (A hand electric mixer also works) cream together butter, shortening, and sugar, on medium-high speed, next add in eggs, vanilla extract, and instant pudding mix. Continue mixing until thoroughly incorporated.

STEP 2: DRY INGREDIENTS

In a medium bowl stir together dry ingredients, all purpose flour, baking powder and salt and next add the flour mixture to the wet ingredients a little at a time mixing between additions until all the flour is incorporated. Use a rubber spatula or butter knife to scrape down the sides of the bowl.

STEP 3: SCOOP AND BAKE

Next, using a cookie scoop or spoon scoop drop by tablespoonfuls onto the prepared sheet pan, about 2 inches apart. Then bake for 12-15 minutes or until set and lightly golden brown around the edges. Remove from the oven and allow to cool on the baking sheet for 5 minutes before removing to a cooling wire rack to cool completely.  Finally, frost with icing.

The dough can be made up to twenty four hours in advance. Wrap well with plastic wrap and keep in the fridge to chill until ready to bake

The enemy is the air. Therefore, store in a zip top bag and suck out as much air as possible. Keep at room temperature for up to 5 days. Store in single layers with parchment or waxed paper in between the layers.

Of course, for the best results freeze the cookies baked but not iced. They will hold up best. Thaw and then decorate as you wish.
