This Baked Bruschetta Chicken is one of my favorite 30 minute, easy baked chicken recipes. Tender, juicy chicken is topped with a bright, flavorful tomato mixture then baked with mozzarella cheese and drizzled with a balsamic glaze. This recipe is a flavor explosion!
This baked bruschetta chicken. Is very rustic and very good. I used my classic bruschetta topping and piled it on top of a seared, then baked chicken breast. Then, I topped the entire thing with mozzarella cheese and drizzled a balsamic reduction on top. All of this might sound fancy and complicated, but it’s not. Trust me. It’s quick and easy and, oh, so very good!

- Chicken Breasts: 4 thin boneless skinless
- House Seasoning Blend : A mix of salt and other herbs and spices you can also use Italian Seasoning if you prefer.
- Mazola Corn Oil
- Chopped Tomatoes: Cherry tomatoes or grape tomatoes can be used as well.
- Shallot: minced. Red onion can be used if you do not have shallots.
- Garlic: Minced cloves garlic teaspoon.
- Fresh Basil: 3 tbsp minced
- Balsamic Vinegar
- Mozzarella Cheese: 1/4 cup part-skim cheese
- Balsamic Glaze

How to Make Recipe for Chicken Bruschetta
These are the basic steps for making chicken bruschetta. Please refer to the recipe card below for more detailed instructions and nutrition information.
STEP 1: PREP
First, preheat the oven to 350 degrees and then season chicken on both sides with 1 teaspoon of House Seasoning Blend.Then heat 1 tablespoon of Mazola Corn Oil or olive oil in a large, oven safe skillet over medium high heat.Sear chicken on each side – about 2-3 minutes per side.
STEP 2: BAKE
Transfer skillet to oven and bake for 20 minutes or until internal temperature of chicken is 160 degrees.
STEP 3: TOPPING
Meanwhile, make the bruschetta topping. In a bowl, combine the chopped tomatoes, shallots, garlic and basil and then stir in 1/4 teaspoon of House Seasoning Blend, remaining tablespoon of Mazola Corn Oil and balsamic vinegar. Stir to combine.
STEP 4: ASSEMBLE
When chicken has reached an internal temperature of 160 degrees, remove the pan from the oven and top each chicken breast with 1/4 cup of bruschetta mixture. Sprinkle the mozzarella cheese on top of the tomato mixture and return the chicken to the oven for 5 minutes.
STEP 5: TOP
Finally, remove chicken from the oven and drizzle with balsamic glaze before serving.
STEP 6: GLAZE
Bring balsamic vinegar to boil in a small saucepan. Allow to thicken.

This recipe is ideal if it is made fresh, it takes less than thirty minutes, however store any leftovers in an airtight container in the refrigerator.
HOW TO FREEZE THIS RECIPE
Truly, it is not ideal to freeze as again, the fresh element is what makes this recipe so appealing. However, you can freeze for up to three months. It will not have the samae consistency as when freshly made.
HOW TO REHEAT THIS RECIPE
Thaw in the the fridge overnight and then warm on the stove top until done or heat in a baking dish in the oven at 350 until warmed through.
