This 30 minute Bruschetta Chicken is one of my favorite easy baked chicken recipes.   Tender, juicy chicken is topped with a bright, flavorful tomato mixture then baked with mozzarella cheese and drizzled with a balsamic glaze.  This recipe is a flavor explosion!

What Is Bruschetta Chicken

I’m a huge fan of bruschetta.  It’s an Italian appetizer consisting of toasted bread, drizzled with oil and topped with garlic and tomatoes.  It’s very rustic and very good.

This appetizer inspired me to create this easy chicken recipe.  I used my classic bruschetta topping and piled it on top of a seared, then baked chicken breast.  Then, I topped the entire thing with mozzarella cheese and drizzled a balsamic reduction on top.  All of this might sound fancy and complicated, but it’s not.  Trust me.  It’s quick and easy and, oh, so very good!

There aren’t many ingredients in this recipe so it’s important to use the freshest ingredients you can get.  I love using tomatoes off the vine – they’re sweeter and juicier.

How to Make Chicken Bruschetta – Step by Step

  • Heat Mazola Corn Oil in Skillet: Mazola Corn Oil is a heart-healthy all-purpose cooking oil that is perfect for this recipe. (Photo 1 below)
  • Season Chicken: Generously season both sides of the chicken and place it in the heated oil to sear.  (Photo 2 below)
  • Sear Both Sides of the Chicken: Sear both sides of the chicken for a few minutes. (Photo 3 below)
  • Transfer to Oven: Transfer seared chicken to oven to finish cooking.  (Photo 4 below)

Step by step instructions for making bruschetta chicken

  • Chop Tomatoes: Begin making the bruschetta topping by chopping fresh tomatoes into small pieces. (Photo 1 below)
  • Add Garlic, Shallot and Basil: Add garlic, shallots and basil to the tomatoes. (Photo 2 below)
  • Add Mazola Corn Oil: Add Mazola Corn Oil to the bruschetta mixture.  (Photo 3 below)
  • Add Balsamic Vinegar: Add balsamic vinegar to the bruschetta topping.  (Photo 4 below)

  • Top Chicken with Bruschetta Mixture: Remove chicken from the oven and top with bruschetta mixture. (Photo 1 below)
  • Add Mozzarella: Top the bruschetta mixture with a small amount of mozzarella and bake for a few minutes longer. (Photo 2 below)

Guilt-Free Swaps for this Easy Baked Chicken Recipes

This easy Bruschetta Chicken recipe is a lighter recipe that tastes great.  To make it better for you, I made some ingredient swaps to my original recipe.  First, I swapped out olive oil and  butter for Mazola Corn Oil.  Mazola Corn Oil has a neutral taste that lets the freshness of the ingredients shine.

Mazola Corn Oil is also a great option for this recipe because it has a higher smoke point.  This means that when you sear the chicken and then transfer it to a hot oven, your pan won’t smoke and create an off-putting flavor.

I also swapped out full-fat mozzarella cheese for part-skim mozzarella.  You still get all of the flavor and texture without the added fat.

Last, I removed the brown sugar from the balsamic reduction.  Balsamic vinegar has a natural sweetness that intensifies as it’s reduced.  You don’t need the extra sugar to get incredible flavor.

Expert Tips for Making the Best Bruschetta Chicken

  1.  Use the freshest ingredients you can find in this recipe.  The better the ingredients, the better the final dish.
  2. Use Mazola Corn Oil instead of olive oil.
  3. Use part-skim mozzarella cheese.  The flavor and texture works great in this recipe.
  4. Season your chicken well with my House Seasoning Blend.
  5. Make sure you are using an oven-safe skillet.
  6. This recipe goes perfectly over my Creamy Polenta or cauliflower rice.

Ingredients

  • 4 thin boneless skinless chicken breasts
  • 1 1/4 teaspoons House Seasoning Blend divided
  • 2 tablespoons Mazola Corn Oil divided
  • 1 cup chopped tomatoes
  • 1 shallot minced
  • 1 teaspoon minced garlic
  • 3 tablespoons minced fresh basil
  • 1/2 tablespoon balsamic vinegar
  • 1/4 cup part-skim mozzarella cheese
  • Balsamic glazed recipe below

Balsamic Glaze

  • 2 cups balsamic vinegar

Instructions

  • Preheat oven to 350 degrees.
  • Season chicken on both sides with 1 teaspoon of House Seasoning Blend.
  • Heat 1 tablespoon of Mazola Corn Oil in a large, oven safe skillet over medium high heat.
  • Sear chicken on each side - about 2-3 minutes per side.
  • Transfer skillet to oven and bake for 20 minutes or until internal temperature of chicken is 160 degrees.
  • While chicken is baking, make the bruschetta topping.
  • In a bowl, combine the chopped tomatoes, shallots, garlic and basil.
  • Stir in 1/4 teaspoon of House Seasoning Blend, remaining tablespoon of Mazola Corn Oil and balsamic vinegar. Stir to combine.
  • When chicken has reached an internal temperature of 160 degrees, remove the pan from the oven and top each chicken breast with 1/4 cup of bruschetta mixture.
  • Sprinkle the mozzarella cheese on top of the tomato mixture and return the chicken to the oven for 5 minutes.
  • Remove chicken from the oven and drizzle with balsamic glaze before serving.

Balsamic Glaze

  • Bring balsamic vinegar to boil in a small saucepan.
  • Reduce heat and simmer for 25 minutes or until reduced by at least half.

  1.  Use the freshest ingredients you can find in this recipe.  The better the ingredients, the better the final dish.
  2. Use Mazola Corn Oil instead of olive oil.
  3. Use part-skim mozzarella cheese.  The flavor and texture works great in this recipe.
