While we still had some nice weather, I thought I would sift through the pile to find one more grilling recipe to try. This is what I came up with…Grilled Balsamic Skirt Steak. I absolutely adore balsamic vinegar and that’s what caught my eye with this recipe. I found this recipe over a year ago in a Cooking Light magazine (one of the very many cooking magazines that I subscribe to).
Today’s post is a two-fer! You’re getting two for the price of one!
A few weeks ago a friend of mine was telling me about this great dinner that her husband had made — grilled pork chops with a grilled pineapple salsa. For days, I couldn’t stop thinking about that salsa! I had to have it. So, what’s a girl to do? Google it!
Usually for Taco Tuesday at our house I make traditional beef tacos or my Baked Chicken Fajitas. However, this week I decided to try something a little bit different — shrimp tacos.
While the shrimp were baking, I mixed up the Boom Boom Sauce. Have you ever heard of Boom Boom Sauce? I hadn’t…until this week. My friend, Angelina, had some leftover from one of her favorite sandwich shops. As soon as I tried it, I knew it would go perfectly with this recipe.
It took a little bit of trial and error to get the ingredients just right, but I believe I managed to make a pretty awesome copycat sauce. It’s a little sweet, a little garlicky and packs a nice boom! Not too much, though. Just a little zip to wake up your taste buds.
The best part was these shrimp tacos were ready to eat in under 20 minutes! Just 20 minutes.
There was so much flavor and texture in these tacos. We couldn’t get enough of them! In fact, as I’m writing this blog post, I can’t stop thinking about them. I’m going to have to make them again VERY soon.
Lately, I’ve been hearing a lot about short ribs. Julie Powell talked about them in her book Cleaving. The chefs on Top Chef are always whipping up recipes with them. The Food Network chefs have been using them a lot lately, too. I’m embarrassed to admit that I’ve never had them.
Which only meant one thing…I had to give them a try! So I scoured my pile of collected recipes, looking for a short ribs recipe. Oddly enough, I found one….on the back of another recipe for Parmesan Pork Roast (that I’m dying to try so stay tuned!) that I had set aside! BINGO! And, this recipe is made in the slow cooker — DOUBLE BINGO!
