Easy Apple Crumb Pie

This Apple Crumb Pie is one of my go-to easy dessert recipes.  I love this recipe because you don’t have to make a traditional pie crust.  Instead, you make the crust right in the pie plate and it’s…well…easy as pie!

This recipe is actually a spin off of the Blueberry Crumb Pie that I posted a few months ago.  This pie was such a hit that I’ve been making it non-stop ever since.  I really love that you can play around with the fillings, too.  You could easily make this into a cherry, peach or strawberry rhubarb pie.  The possibilities are endless!

One thing I found is, this pie will easily come out of the pie plate if you use an even coating of PAM cooking spray.  I use PAM for most everything in the kitchen.  I love the stuff.

Of course, I learned the hard way.  A number of years ago, I was pregnant with my son and decided I was going to make traditional recipes for Christmas — a Kransekake to honor my Norwegian heritage and ravioli to honor my Italian roots.

Kransekake is a wreath cake made from eggs, almonds and sugar.  It’s a tower of concentric rings layered on top of each other.  It’s really quite beautiful.  It requires special pans to make it.  The cake is not like any American cake.  It’s hard to the touch but soft and chewy on the inside.

So, there I was armed with my authentic Norwegian cake pans and a dough that I made by painstakingly translating and converting the measurements from their metric equivalents.  I carefully rolled it out and placed in the pans and put it in the oven.  I watched through the door as it baked into a beautiful golden brown.  I was so excited!

When it came time, I carefully removed the cakes from the oven and waited for them to cool a bit.  The whole house had a wonderful almond aroma.  I was so proud of myself!  If instagram was around then, I would have been sending photos of my materpiece into cyberspace.

Then, I attempted to remove the rings from the cake pans.  Those suckers weren’t budging! I tried to carefully run a knife under them to loosen it.  No dice.  By this time, I was hot (with pregnancy hormones coursing through my body) and extremely frustrated.  I could not get the rings out of the pan!

To make a very long story short, my rings finally come out — in pieces and the whole thing was a mess.  I may or may not have thrown one or two across my kitchen in a pregnant hormonal rage.  I plead the fifth.

If only I had thought to spray the pans with PAM my beautiful cake would have come out and I would have been able to serve my family a traditional Norwegian treat.  Needless to say, we did not enjoy a homemade Kransekake that year (or any year there after — I’m still scarred).  Instead, I wait for my Aunt Kirsten to bring one over when she visits.

From that point forward I use PAM on everything!  I love that their new and improved formula has zero calories per serving and now leave up to 99 percent less residue buildup than margarine or bargain brand-cooking sprays while still offering superior no-stick results.

Easy Apple Crumb Pie

PAM Cooking Spray
2 cups flour
2 tsp sugar
3/4 tsp salt
1/2 tsp cinnamon
2/3 cup canola oil
3 Tbsp milk
4 cups apples, peeled, cored and sliced
2/3 cup sugar
3 Tbsp flour
dash lemon juice
dash salt
2 tsp cinnamon

Preheat oven to 400 degrees.

For crust: Spray pie plate with an even coating of PAM cooking spray.  Put flour, sugar, cinnamon and salt in a pie plate. Stir with fork until combined. In a small bowl, combine milk and oil and pour over dry ingredients. Reserve 1/3 of the dough for the crumb topping. Press remaining dough into the pie plate, making sure to go up the sides.

For the filling: Place the apples and sugar in a microwave safe bowl and microwave on high for 2 minutes. Add flour to the apples and microwave for an additional 2 minutes. Stir in lemon juice, salt and cinnamon. Pour filling into prepared crust. Scatter the reserved dough across the top for the crumb topping.

Bake at 400 degrees F for 30 minutes.

    A couple of years ago I made a long-distance trip to spend Thanksgiving with my family and it turned out that I had to get the meal together. Not really a mishap, but we ate pretty late that day!

    I think the biggest mishap was totally undercooking a turkey….so frustrating.

    We’ve tried to make cookie bowls…they type on pinterest where you cook the dough on the back of a cupcake tin….not so much. Mess everywhere.
