Nothing says “comfort food” like slow cooker pot roast! I had an extremely busy weekend ahead of me, but I still wanted to sit down to a good, home-cooked meal on Sunday evening. Enter… the slow cooker! This recipe tastes like you fussed over it, but it’s really one of my favorite quick dinner ideas and easy recipes that always makes it into my meal planning rotation.
The flavors in this recipe took my traditional recipe up a few more notches! I didn’t add potatoes and carrots this time, but I will definitely try it next time!
I did make a minor modification to the recipe. A 4 pound roast is too big for my family. I ended up dividing all of the ingredients in half, putting half in the slow cooker and half in a Ziploc freezer bag. Now I have another easy meal waiting for me in the freezer! I can’t wait!
When it comes to slow cookers, there are many options available – from the basic to the ultra fancy. My favorite is the Hamilton Beach 33967 Set ‘n Forget 6-Quart Programmable Slow Cooker. I have had a number of slow cookers over the years and this is by far my favorite. It’s easy to use and program. It’s just the right size and it has handy clips that hold the lid on securely while you’re traveling.

This recipe would make a perfect freeze-ahead slow cooker meal! Just put all of the ingredients together in a zip top bag and stash it in the freezer. Then, when you’re ready to make it, simply thaw the package overnight in the fridge, put it in your slow cooker and cook according to the directions.

Italian Pot Roast

1 boneless beef chuck roast (about 4 pounds)
1 envelope brown gravy mix
1 envelope Good Seasons Italian salad dressing mix
½ cup red wine
½ cup water
2 Tbsp Worcestershire sauce
1 medium red bell pepper, chopped
1 medium onion, chopped
2 cloves garlic, minced
In slow cooker, combine gravy mix, salad dressing mix, wine and water. Place roast in slow cooker and top with peppers and onions. Cover and cook on low for 7-8 hours, or until meat is tender.
