This is one of those recipes that I found on a magazine ad. I can’t remember if it was an ad for Hellmann’s Mayo or Kraft Parmesan Cheese. In any case, it’s been in my recipe pile for quite some time so I decided to give it a try. I was looking for a quick, weeknight meal that didn’t require a lot of hands-on time and this Parmesan Crusted Chicken met my criteria.

1/2 cup mayonnaise
1/4 cup grated parmesan cheese
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
4 tsp Italian seasoned dry bread crumbs
Preheat oven to 425 degrees. Combine mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs. Bake 20 minutes or until chicken is thoroughly cooked.
Is It a Keeper?
If you’re in the market for an easy dish, this Parmesan Crusted Chicken fits the bill. It was pretty tasty too. I used fresh grated parmesan cheese and I think it definitely makes a different. I served it with my favorite homemade mac and cheese and some steamed broccoli. I actually had to tell my 6 year old to stop eating broccoli and start eating some chicken! Seriously, what parent does that?!?! My son eats broccoli like it’s his job!

I am on a gluten elimination diet, per doctors orders, and made a modified version of this recipe. I used thin sliced chicken breasts instead of the bigger ones and marinated them in zesty italian dressing from the bottle. I then mixed 1/3 cup mayonnaise, and 1/3 of fresh grated parmesan and spread it out on the marinated chicken. I had to omit the bread crumbs because of the no gluten thing. I must say, this is some of the best chicken I have ever made! I will definitely be doing again and once (if all goes well) I can reintroduce gluten again I will try with the breadcrumbs.
