STEP 1: Prep
Preheat oven to 425 degrees and combine mayo with parmesan cheese in a shallow bowl.
STEP 2: Arrange
Arrange boneless, skinless chicken breasts on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs. If you like a heavier bread crumb mixture you can make a dipping station and then dip the chicken in the egg in the first bowl and dredge in the panko in the second bowl, turn to coat evenly. Remove excess until just a light coating is present.
STEP 3: Bake until Golden Brown and Crispy
Bake for 20 minutes or until chicken is thoroughly cooked and the crust is golden brown. I like to flip mine halfway so the oven cooks chicken for about 10 minutes per side. Use meat thermometer to make sure that the internal temperature reaches 165 degrees.

I am on a gluten elimination diet, per doctors orders, and made a modified version of this recipe. I used thin sliced chicken breasts instead of the bigger ones and marinated them in zesty italian dressing from the bottle. I then mixed 1/3 cup mayonnaise, and 1/3 of fresh grated parmesan and spread it out on the marinated chicken. I had to omit the bread crumbs because of the no gluten thing. I must say, this is some of the best chicken I have ever made! I will definitely be doing again and once (if all goes well) I can reintroduce gluten again I will try with the breadcrumbs.
