This morning, I watched my little get on the school for his first day in second grade. I still can’t believe he’s growing up. Has anyone figured out how to stop that yet?!?! He’s growing up right before my eyes. In honor of the first-day-of-school, I’m going to share a fun lunch box idea with you — Peanut Butter & Jelly Sushi!
How cute would these little sushi rolls be in your child’s lunch box?! He or she will definitely be the envy of the lunch table! This really isn’t a recipe, per se. It’s more of a technique. And, once you get it down, the possibilities are endless! You can really use any filling – as long as they are thinly sliced.  I’m thinking of doing turkey and spinach next! What fillings would you use?
Peanut Butter and Jelly Sushi

2 slices of whole grain bread
2 Tablespoons peanut butter
2 Tablespoons jelly
Remove the crusts from both slices of bread. Slice each piece of bread horizontally into three strips. Spread a thin layer of peanut butter on each strip of bread. Top with jelly. Roll each strip into a sushi-style roll.
