This easy Cheeseburger Soup recipe is one of my favorite 30 minute recipes. It’s packed with flavor and tastes just like a regular cheeseburger!
Cheeseburger Soup
On cold, blustery days there is nothing like cuddling up with a big, steaming bowl of soup. My go-to recipes are usually this easy Chicken Corn Chowder recipe or my favorite Italian Wedding Soup, but sometimes I’m craving something meatier.
This easy Cheeseburger Soup recipe is one of my favorite quick and easy soups. I love that it’s ready in 30 minutes. Plus, it’s packed full of goodness that really fills you up.

A few years ago, I hosted a Soup Swap party. It’s very similar to a holiday Cookie Exchange but instead of swapping cookies, you exchange soups. This is one of my favorite ways to connect with my friends over food.
I wanted to make a unique soup that no one had tried before and this recipe for Cheeseburger Soup was born.
It turned out great! I ended up making a double batch so that I had enough to swap with everyone else at the party. I love when I can easily double a recipe – it’s perfect to stash some in the freezer for a night when I don’t feel like cooking.
This recipe is loaded with lots of meaty flavor. The base is full of aromatics – like celery, carrots and onions. To boost the flavor even more, I add some of my homemade Burger Seasoning Blend to the Cheeseburger Soup recipe.
This is the blend that I always use when making burgers so I figured it would be perfect in this soup.

Get creative when serving up this easy Cheeseburger Soup recipe. Here are some ideas to inspire you:
- Serve it in a crock (like I did) and add some toasted, homemade croutons to the top.
- Pick up a loaf of round bread from a bakery, hollow it out and serve the soup in a bread bowl.
- Make it a meal and serve the soup with your favorite salad and hunk of crusty bread.
- Want to add some tomato flavor to this recipe for Cheeseburger Soup? Stir in a can of diced tomatoes.
Tips for Making this Recipe for Cheeseburger Soup
- If you’re short on time, skip the prep stage by buying pre-chopped veggies. Many grocery stores sell veggies already chopped in the produce department.
- If you like to plan ahead, use ground beef that you’ve already browned and frozen. It’s a great timesaver.
- I like to make double batches of this soup and freeze half for another meal.

Easy Cheeseburger Soup
Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground beef
- 1 teaspoon Burger Seasoning Blend
- 3 teaspoons House Seasoning Blend - divided
- 4 tablespoons butter - divided
- ¾ cup onions - diced
- ¾ cup carrots - shredded
- ¾ cup celery - diced
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 4 cups potatoes - peeled and diced
- 3 cups chicken broth
- ¼ cup flour
- 2 cups processed cheese (Velveeta), cubed - can substitute 2 cups shredded cheddar cheese
- 1½ cups milk
Instructions
- In a large Dutch oven, heat vegetable oil until shimmering; add ground beef and 1 teaspoon of Burger Seasoning Blend. Cook until meat is browned.
- Remove ground beef from pot and drain off excess fat.
- Melt 1 tablespoon of butter over medium high heat.
- Add onion, carrot, celery and House Seasoning Blend; sauté until tender.
- Add basil and parsley and sauté for 30 seconds.
- Add the chicken broth, 2 teaspoons of House Seasoning Blend and potatoes; cover and bring to a boil.
- Reduce heat and simmer for 10-12 minutes or until the potatoes are fork tender.
- Meanwhile, in a small skillet, melt the remaining 3 tablespoons butter and add the flour.
- Whisk for 3 minutes or until a bubbly paste forms.
- Add the flour paste and the ground beef to the soup and bring back to a boil for 2 minutes.
- Reduce heat to low and stir in the cheeses, milk, salt and pepper. Stir until cheese melts.
- Top with extra shredded cheese before serving.
Nutrition
- Want to scale a recipe up or down? Simply type in a new serving amount and the recipe will automatically adjust!
- When a recipe call for House Seasoning Blend, you can use this recipe or substitute salt and pepper to taste.
- I always use unsalted butter in my recipes.
- I always use a meat thermometor to test for doneness when cooking meat. This one is my favorite.
- When a recipe is made in the oven, it should be pre-heated to the temperature in the recipe, unless otherwise noted.
