Brownies were first invented in 1893 in Chicago at the famous Palmer House Hotel. They were created as a special treat for lady socialites that could be easily kept and transported in their lunch boxes. A little fun fact, they weren’t even called brownies at first!

Do I Have to Heat Treat the Brownie Mix?

Five of the brownie balls with colorful sprinkles.

Yes. In the recipe it will tell you that you need to microwave the dry brownie mix. This is because raw flour can contain bacteria like e. coli and salmonella, so it’s important to always heat your flour to 160 degrees before eating. I use this instant read thermometer to check.

Variations and Substitutions to Make Brownie Bites

These brownie bites are super easy to modify to your liking.

  • Alternate Ingredient: If you don’t like sprinkles, use chocolate chips, cacao powder, candy, chocolate frosting or coconut shavings instead! Or whatever taste and texture you enjoy. Use chocolate chips instead of sprinkles. Cream cheese inside the balls is great too.
  • Extract: Try adding vanilla extract, peppermint extract or other flavoring.
  • Dietary consideration tip: Use low sugar or sugar free versions of your favorite treats

Making the brownie batter.

STEP 1: Heat Treat your Favorite Brownie Mix

Dump dry brownie mix in a large microwave safe bowl. Place in microwave and heat in 30 second increments, stirring between each, for about 1½ minutes or until temperature is 160 degrees (I use an instant read thermometer to check).

STEP 2: Roll the Fudgy Brownie

Remove from microwave and add in corn syrup, chocolate syrup and water. Stir until well mixed and smooth. Scoop out 1 tablespoon of brownie mixture and roll into balls. Slightly dampen your hands before your roll the balls, it helps to keep the brownie batter from sticking to them.

STEP 3: Place the Brownies in the Sprinkles

Roll balls in sprinkles to coat. Place the balls on a plate or baking sheet and chill for at least 1 hour to allow the chocolate to set.
