If you are a regular IAK reader, you know that I’m a huge fan of meal planning. We have something going on just about every night so meal planning really helps get dinner on the table and me to keep my sanity.
I always have my meal planner (I’m totally loving this one) on my counter so I can easily keep tabs on what’s going on.
To make dinner time easier, I usually try to incorporate at least one make-ahead meal in my weekly meal plan. These homemade Sloppy Joes are definitely a family favorite. My mom always made them when we were growing up.
I like to make a big batch on the weekend so I have some ready for the upcoming week. Inevitably, I always have some leftover. I usually make Sloppy Joe Grilled Cheese or stash extras in the freezer for another easy meal down the road but this time, I created these Sloppy Joe Puffs to use up the extra Sloppy Joe filling.
In our house, Sloppy Joes tend to be “Big Mess” Joes. Anyone with a school aged boy knows what I mean. Since we’re on the go a lot, these Sloppy Joe Puffs made a great grab-and-go dinner.
My family LOVED these Sloppy Joe Puffs and devoured them. I think next time, I’ll try them with my homemade Sausage and Pepper Sloppy Joes.
During dinner my son said to me, “Mama, how do you know what foods I’m going to love? You always make my favorite things!”
That’s all I needed to hear. This kid. He melts my heart.

Sloppy Joe Puffs
Equipment
Ingredients
- 1 batch of prepared Sloppy Joes
- 1 package canned biscuits, 8 ct
- Shredded cheddar cheese
Instructions
- Spray a muffin pan with non-stick cooking spray.
- Flatten biscuits and place them in the muffin pan so that they form a cup shape.
- Fill each biscuit cup with prepared Sloppy Joe filling.
- Top with shredded cheese.
- Bake in a 375 degree preheated oven for 12-15 minutes or until biscuits are golden and cooked through.

Sorry – I make my own “Manwich” as I am highly allergic to MSG and tend to cook only from scratch. Also the preservative Calcium Chlorhidrate is a preservative used exclusively with MSG. I tend to buy products that use Citric Acid. I have no idea what Manwich has in it but I prefer to use my own sloppy Joe recipe. Except for that I will definitely follow the rest of your idea.
