While the first cheesecakes were invented in ancient Greece, the cheesecake that most Americans are familiar with did not arrive until after the late 19th century. That’s because modern American cheesecake is typically made with cream cheese, which was invented by William Lawrence in 1872, who had accidentally produced it while trying to recreate Neufchâtel cheese. These are the basic steps for making the strawberry cheesecake cookie. Refer to the full, printable recipe card below for detailed instructions.

Step 1: Line a Small Baking Sheet and Add the Dry Ingredients

Prepare baking sheets with parchment paper and set aside. In a mixing bowl, add the butter, granulated sugar, and brown sugar. Use a hand mixer to blend the ingredients together until creamy. Then, add the vanilla, strawberry extract and eggs. Whip the mixture together until smooth.

Gradually add the dry ingredients. Use a rubber spatula to fold all the ingredients together and distribute them evenly until a thick batter is formed.

Step 3: Cream Cheese Mixture

Wrap in plastic wrap and place in the fridge. While the dough chills, make the cheesecake filling. In a separate smaller bowl, mix cream cheese until creamy. Then, add the powdered sugar, blending again until smooth. Afterwards, place a large teaspoon of the cream cheese filling on a parchment covered plate or small baking sheet. Repeat and fill the parchment paper until all the cream cheese filling is gone.

Step 4: Chill and Shape

Place the lined baking sheet in the freezer and let the cookie dough and filling chill for 30 minutes. This will give you large cookies while allowing you to control the spread. Remove both from the freezer and fridge and preheat the oven to 350 degrees Fahrenheit.

Use a cookie scoop to scoop a 2 inch round ball of strawberry cookie dough, and flatten it in your hand. Place a cold ball of cheesecake filling in the center of the cookie dough ball.

Step 5: Bake

Wrap the cookie dough around the cream cheese and roll into a ball, and place onto the prepared baking sheet. Repeat with the rest of the dough balls and keep each about 2 inches apart when placing on the cookie sheet. Once they’re ready to bake, place in the oven for 13-15 minutes, or until the center has puffed and the edges of the cookies have slightly browned. Remove from the oven and allow the cookies to cool for 10 minutes.

Step 6: Drizzle White Chocolate

Let the cookies cool and heat the white chocolate in the microwave at 30 second intervals until melted. Drizzle the white chocolate diagonally over half of each strawberry cheesecake cookie and place the frozen dried strawberry pieces on top of the cookies. Let the chocolate harden by setting on a rack to cool completely for about 30 minutes, or enjoy immediately while the white chocolate is still melted.

Ingredients

Strawberry Cookie Dough

  • 1 cup Unsalted Butter, softened
  • ¾ cup White Granulated Sugar
  • ¾ cup Brown Sugar
  • 1 teaspoon Vanilla Extract

  • 2 3/4 cups All Purpose Flour
