Ramen Noodle Facts

Did you know there are four main types of ramen noodle broths? Shio is salt based, shoyu is soy sauce based, miso is soybean based, and tonkotsu is pork bone based.

There are lots of regional variants of ramen noodles across Japan, and different lengths and shapes of noodles as well. Ramen noodles are made with flour, cornstarch, and kansui, a mineral water that prevents the noodles from absorbing too much stock while staying soft and chewy.

Step 1: Poach the Egg

Fill a medium saucepan two-thirds full with cold water. Over medium high heat, bring the water to a simmer. Stir the water to create a small vortex in the middle and crack the egg into the center. Simmer for 2 to 3 minutes, or until the whites are just set. Using a slotted spoon, transfer the egg to a small plate. Drain the water.

Step 2: Boil Noodles

In the same saucepan, add the chicken broth and heat over medium-high heat until boiling. Add the ramen noodles and cook for 2 minutes. Add the flavor packet, stir, and continue to cook for another 30 seconds, or until noodles are softened.

Step 3: Serve

Carefully transfer the ramen and broth to a serving bowl. Add the cheese, butter, and poached egg. Garnish with green onions and sprinkle on toasted sesame seeds, if using, and add a little chili garlic sauce on the side for a spicy kick, if desired.
