  • 4 Large Eggs, beaten
  • 1 tablespoon Water
  • ¼ teaspoon Salt and Pepper, or to taste
  • 2 tablespoons Butter, divided
  • 4 slices Sourdough Bread
  • 6 slices American Cheese
  • 4 slices Bacon, cooked

Instructions

  • Melt 1 tablespoon of butter in a medium non-stick skillet over medium-low heat. Add the eggs and tilt the pan to cover the bottom of skillet. Allow to sit for 30 seconds, then stir gently, until scrambled, about 3-4 minutes. Remove from heat and set aside.
  • Wipe out the skillet you used to cook the eggs. Melt 1/2 tablespoon of butter over medium high heat.
  • Use remaining tablespoon of butter to coat one side of each slice of bread.
  • Place 2 slices of bread, butter side down, in the skillet.
  • Top each piece of bread with 1 1/2 slices of American cheese, two bacon slices, half of the scrambled eggs and another 1 1/2 slices of cheese.
  • Top each with remaining slices of bread, butter side up.
  • Cook for 2-3 minutes or until bread is golden brown. Flip each sandwich and cook for an additional 2-3 minutes or until golden and cheese is melted.
  • Remove from the skillet and slice each sandwich in half.
