1. Scramble the Eggs
In a medium bowl, whisk the eggs, water, and salt and pepper to taste. Melt 1 tablespoon of butter in a large nonstick skillet over medium heat. Add the eggs and tilt the pan to cover the bottom of skillet. Allow to sit for 30 seconds, then stir gently, until scrambled, about 3-4 minutes. Remove from heat and set aside.
2. Toast the Bread in Skillet Over Medium Heat
Clean out the skillet, then melt 1/2 tablespoon of water over medium high heat. Use the remaining tablespoon to coat one side of each slice of bread. Place them butter-side down in the skillet.

- ¼ teaspoon Salt and Pepper, or to taste
- 2 tablespoons Butter, divided
- 4 slices Sourdough Bread
- 6 slices American Cheese
- 4 slices Bacon, cooked
Instructions
- In a medium bowl, whisk the eggs, water, salt and pepper until no streaks remain.
- Melt 1 tablespoon of butter in a medium non-stick skillet over medium-low heat. Add the eggs and tilt the pan to cover the bottom of skillet. Allow to sit for 30 seconds, then stir gently, until scrambled, about 3-4 minutes. Remove from heat and set aside.
- Wipe out the skillet you used to cook the eggs. Melt 1/2 tablespoon of butter over medium high heat.
- Use remaining tablespoon of butter to coat one side of each slice of bread.
- Place 2 slices of bread, butter side down, in the skillet.
