American Pierogies

This recipe is pure, unadulterated comfort food!  I’m going to warn you right now…there is absolutely NOTHING healthy about this recipe.  While it may not be very nutritious, it is one of those recipes that just makes you feel cozy.  It’s warm and comforting and oh so good!

And, it reminds of my childhood!  My mom used to make this recipe for us when we were kids.  If I remember correctly (it’s been a while now!), my mother made this for one of my first sleep-over parties.  We must have been pretty hungry girls because we polished off an entire pan of the stuff and asked her to make more!  It is THAT good! 

American Pierogies
Compliments of It’s a Keeper

2 sticks butter, melted
1 onion, sliced
1 pound elbow macaroni, cooked and drained
6 servings instant mashed potatoes
16 slices American cheese

Preheat oven to 350 degrees.  Slice onion and place in melted butter. Layer half of the macaroni into the bottom of a 13×9 baking dish.  Add 1/3 of the melted butter and onions.  Place half of the cheese in a single layer on top of the macaroni.  Layer half of the mashed potatoes on top of the cheese.  Add another 1/3 of the butter and onions.  Repeat the layers – macaroni, butter/onions, cheese and potatoes.  Bake at 350 degrees for 30 minutes or until the top is lightly browned.

Is It a Keeper?

Personally, I’ve never tried making homemade pierogi.  But, who needs to?  This recipe tastes just like the real thing!  And, it smells so good while it’s cooking.  You can almost taste the buttery, oniony goodness.  Top it off with creamy mashed potatoes and gooey cheese and….well, now I’m drooling!

If you think this recipe is good the first time around, the leftovers are even better!  Every time I make this dish, though, it gets gobbled up so fast there are barely any leftovers!

Another great thing about this recipe is you can assemble it in advance and bake it off when you need it.  Oh, I almost forgot, I usually use whole grain pasta when I make this.  It’s my attempt to try to add some nutrition to this dish!

    I made this the other night for dinner and LOVED it! I used real potatoes instead of instant and I used cheddar cheese. Next time I am going to make this without all the butter and instead oil the baking dish. Then people can add butter on top if they want. I also think I will make it into Spinach Feta Pierogis which are my favorite (plus it will add some nutritional value!)

    This does look good – but you should make real pierogies someday (the Polish kind – with the home made farmers cheese!) They are very good.

    Things for posting this recipe – we will have to try it!
