Baked Pierogi Casserole is a wonderful way to make a satisfying meal in thirty minutes. You don’t need to make fresh dough, roll out pockets and fill them for homemade pierogies. This recipe replicates the taste without all the work. Poland did not originate the pierogi find out some history here.

What We Love About This Recipe

Every time I make this dish, though, it gets gobbled up so fast there are barely any leftovers! This is one of those easy recipes that is the perfect way to get your kids to eat a potato casserole. It is a great recipe for busy weeknights or game day.

This is one of those potato recipes that you can add cup of cheddar cheese or parmesan cheese or salty bacon and it will always be wonderful. Throw leftovers in a freezer bag for later, it is such an easy recipe just put into a pre heat oven and cook until golden brown.

Another great thing about this recipe is you can assemble it in advance and bake it off when you need it.  Oh, I almost forgot, I usually use whole grain pasta when I make this.  It’s my attempt to try to add some nutrition to this dish!

  • Cooked Pasta: Elbows or any pasta you have on hand.
  • Instant Mashed Potatoes: In this recipe they really do work the best.
  • Cheese: The ones wrapped in plastic are perfect for this recipe.

How to Make Pierogi Lasagna

These are the basic steps for making pierogi lasagna. Please refer to the recipe card below for more detailed instructions. The pierogi recipes are better than the frozen pierogies you buy in the grocery store and this great recipe is a new way to make them.

STEP 1: PREP

First, pre heat oven to 350 degrees and then melt butter in a saucepan. Slice onions and then place in melted butter.

STEP 2: LAYER

Next, layer half of the macaroni into the bottom of a 13×9 baking dish, sprayed with vegetable spray or olive oil .  Add 1/3 of the melted butter and onions.  Place half of the cheese in a single layer on top of the macaroni and then layer half of the mashed potatoes on top of the cheese.  Add another 1/3 of the butter and onions.

STEP 3: BAKE

Repeat the layers – macaroni, butter/onions, cheese and potatoes.  Finally, bake at 350 degrees for 30 minutes or until the top is lightly browned.

HOW TO MAKE THIS RECIPE AHEAD OF TIME

Really it is so easy to assemble. Cook the pasta in advance, you can also make the instant mashed potatoes ahead of time and keep both in the fridge until ready to make.

Cover with foil or plastic wrap and store leftovers in the refrigerator.

HOW TO FREEZE THIS RECIPE

Make a double batch and store in the casserole dish. Wrap in plastic wrap and then foil to freeze.

Thaw the perogie casserole in fridge overnight and then follow the baking directions in the recipe card below.

Of course, while the american cheese really works well you can use cheddar, feta or any cheese that you have on hand or a combination of several.

CAN THIS RECIPE BE DOUBLED OR HALVED?

Indeed, make the portion size that you need for your family. If doubling simply place into two casserole dishes.

WHAT PASTA SHOULD I USE?

Elbows work great however, you can use lasagna noodles, egg noodles or whatever your family likes. Whole wheat or gluten free pasta works too.

  2. I made this the other night for dinner and LOVED it! I used real potatoes instead of instant and I used cheddar cheese. Next time I am going to make this without all the butter and instead oil the baking dish. Then people can add butter on top if they want. I also think I will make it into Spinach Feta Pierogis which are my favorite (plus it will add some nutritional value!)

  3. This does look good – but you should make real pierogies someday (the Polish kind – with the home made farmers cheese!) They are very good.
