  • Chocolate Cake Mix: Whatever is on sale or whatever tried and true brand that you prefer.
  • Andes mint chips: Or any brand of mint flavor baking chips.
  • Andes chocolates: Again, use whatever brand that you like, including sugar free versions.

  • Vegetable Oil – Melt unsalted butter and use that instead.
  • 2 eggs: Large eggs at room temperature.

How to Make mint chocolate chip cookie recipe

These are the basic steps for making chocolate mint cookies. Please refer to the recipe card below for more detailed instructions, prep time, cook time etc.

STEP 1: PREP

First, preheat your oven and line your baking tray with parchment paper or a silicone mat.

STEP 2: COOKIE DOUGH

Then in a large bowl mix the chocolate cake mix (It has the dry ingredients, cocoa powder, all purpose flour, salt, baking soda etc all in the mix), baking chips, vegetable oil and eggs. Beat with an electric mixer (or a stand mixer) for 2 minutes.

STEP 3: SCOOP AND BAKE

Next, use a cookie scoop to portion out 2 Tablespoon-sized pieces of dough onto the baking pan, about 3” apart. Bake for 8-10 minutes, until cookies have puffed up and cracks have formed.Remove the cookies from the oven and immediately place one unwrapped chocolate on each chocolate mint cookie.

STEP 4: SPREAD

Finally, allow the chocolate to warm up for 3-5 minutes, then use an offset spatula to spread the melted chocolate over the cookie. Cool cookies on a wire cooling rack.
