Mint Chocolate Chip Cookies are a favorite because they remind me so much of those iconic Thin Mint Cookies we all love but even better! Most importantly, they are super easy to make with a box cake mix.

These mint chocolate chip cookies are not difficult to make. They are a great baking project with your kids. The very best part is that they taste fantastic. The combination of rich chocolate and cool mint is always a winner.

Why Mint Chocolate Chip Cookies Work

Ordinarily I would say always make a cookie from scratch but sometimes you just do not have the time or the necessary ingredients. Cookies like this made from a cake mix always come out moist, dense and delicious in no time at all.

How to Make Chocolate Mint Cookies Recipe – Step by Step 

  • Preheat Oven: Set oven to 350F. Next, line a baking tray with parchment paper or a silicone baking mat.
  • Mix ingredients: In a large bowl, combine the chocolate cake mix, baking chips, vegetable oil and eggs. Beat with an electric mixer for 2 minutes, until a cohesive dough forms with no dry patches. 
  • Scoop out Cookies: Use a cookie scoop to portion out 2 Tablespoon-sized pieces of dough onto the baking tray, about 3” apart. Bake for 8-10 minutes, until cookies have puffed up and cracks have formed. 
  • Top with Chocolate: Remove the cookies from the oven and immediately place one unwrapped chocolate on each cookie.

  • Spread Chocolate: Allow the chocolate to warm up for 3-5 minutes, then use an offset spatula to spread the melted chocolate over the cookie. Allow the melted chocolate to set before storing or serving. 
  • Continue process : Finally, repeat with remaining cookies.

Important to note when making Chocolate Mint Cookies or any cookie remember a few tips and tricks

  • Egg size- It really does matter. Large eggs are usually the standard for baking. They should also always be at room temperature.
  • Non stick baking mats are really the ideal material when baking. The Silicon will help your cookies from sticking.
  • Check your oven temperature is correct as well as watch your bake time carefully, Set your timer for a few minutes before the bake time is up to make sure they are not overbaked.
  • Use cool pans so that the cookies do not melt before you put them in the oven.

Absolutely, you can freeze your cookies, here are a few tips:

  • Be sure the cookies are completely cooled before freezing.
  • Place the cookies into an airtight container or freezer bag.
  • Separate your treats with layers of wax paper or parchment.
