STEP 1: Prep
First, pre heat oven to 350 degrees F. then line cookie sheets with parchment paper. Next, stir flour, baking powder, baking soda and salt.
STEP 2: Blend Peanut Butter and Combine Flour
Second, in a large bowl with mixer on medium speed, combine peanut butter and butter on low speed until well blended. Then add the sugars and beat with an electric mixer on medium speed until creamy and light about 2 minutes. Add egg and vanilla extract, then slowly incorporate the flour mixture beat just until blended.
STEP 3: Scoop and Press a Criss-cross Pattern on top of Prepared Baking Sheet
Next, use a cookie scoop to portion out the dough into dough balls and drop dough 2 inches apart on ungreased baking sheet with parchment paper. Use tines of fork to flatten lightly on the dough, flattening them and making a classic crisscross pattern.
