  • Large Eggs: Use room temperature large eggs for this recipe.
  • Oil: You can also use canola oil or other vegetable oil. You can replace oil with applesauce, avocado or even Greek yoghurt in the chocolate crinkle cookies from cake mix. Melt butter or unsalted butter can work too.
  • Sugar Substitute: – You can use a sugar alternative powdered sugar for these brownie mix cookies, try Serve or Splenda powdered sugar.

STEP 1: PREP

Begin by preheating oven and lining your baking sheet with parchment paper.

STEP 2: MIX

Next, in a large mixing bowl whisk the box brownie mix, large eggs, olive oil and flour together. ( You can use a stand mixer with a whisk attachment or a hand mixer at low speed) Then take about one tablespoon full of dough and roll in your hand into a ball. Next, roll cookie dough in a medium bowl of powdered sugar coating it well. 

STEP 3: PRESS

Take some extra sugar and press into the top of the brownie cookie.

STEP 4: BAKE

Place on a baking sheet lined with parchment paper or a silicone mat. Space 2 inches apart as the cookies will expand as they cook. Bake for 11 minutes then remove with a cookie spatula to a cooling rack.

  • 18.4 ounces brownie mix
  • 1 ½ cup flour
  • 3 eggs
  • cup olive oil
  • 1 cup powdered sugar

Instructions

  • Preheat oven to 350 degrees F.
